Place 1 C of hot water (approx. 110 F) in a medium bowl and add the yeast and sugar under "Dough" section. Stir and let sit for 10 minutes until it becomes creamy and frothy.
In a large mixing bowl add the flour + all other ingredients in the "Dough" section(TIP: warm the flour in a dry pot first and it will rise much easier!). Mix the creamy yeast mixture into the flour mixture until it turns into a soft slightly sticky sticky ball.
Cover with a damp napkin and let sit on the stove to rise while you make the filling and icing.
For the "Icing" blend the coconut sugar and tapioca starch in a high speed blender until it creates a powdered sugar. Place in a small bowl and add the vanilla and maple extracts and non-dairy milk. Mix until smooth. Add more milk if necessary or to get your preferred thickness.
For the "Filling" add all the ingredients (minus the pecans) into a blender. Process until smooth. Place in a bowl and set aside.
Lightly flour a 10"x10" area. Place dough on the floured surface and roll out into the desired thickness you want. Take a butter knife and spread the "Filling" mixture evenly over the surface of the dough. Sprinkle the chopped nuts over the surface of the filling.
After the filling is applied then I like to take a pizza cutter and cut 1 1/2" strips through the dough. Once cut, I roll the strips into cinnamon rolls to be placed into a large baking pan.
Once placed in the pan, spray coconut oil on the surface of the cinnamon rolls. Place on the top rack of the oven and bake until desired "gooeyness" is acheived! As for me I like them cook for 12 minutes :]
